西餐廳服務人員禮儀
1、講究個人衛(wèi)生。著裝整潔、無污損，并使自己的頭部、手等部位保持清潔。為顧客提供服務時，做到舉止得體、自然。
2、熟悉菜肴酒水。當顧客對菜肴、酒水不甚了解時，應及時給與詳細的解釋，并適當?shù)亟o出合理的點餐建議，不可一問三不知、答非所問。
3、尊重客人選擇。顧客點餐時，不反復推薦客人不點的菜肴、酒水等。尊重顧客的宗教、民族習慣，對于第一次來就餐的顧客，主動詢問是否有忌口或其他的用餐習慣。
4、服務熱情細致。在接到客人訂餐時，認真記錄來客人數(shù)和用餐時間，并問清是否需要吸煙區(qū)或視野良好的座位;當客人進入餐館，熱情、主動地將客人帶到座位;在為顧客提供服務時，遵循先女賓后男賓、先客人后主人、先長輩后晚輩、先兒童后成人的原則;客人離去時，提醒顧客不要遺忘所帶物品，并表示感謝，歡迎再次光臨。
上菜注意事項如下：
?、偻洳烷g或廚房叫菜，不可爭先恐后，按順序接受領菜;
②離廚房之前，檢察托盤的清潔，依服務順序放置托盤上，并注意菜品的美觀和溫度
?、凵喜藭r不可貪便宜，除了干的菜肴勉強用手拿送，帶湯汁的菜宜用托盤，端的太多既難看又可能發(fā)生意外：
?、茴I菜回到餐廳先放置工作臺，到餐桌招呼一聲，順便收除臟的茶杯及煙灰缸，以騰出放置菜肴的空間。
?、萑缡浅燥埖牟?。隨即盛飯送上;若為下酒的菜，服侍飲料倒啤酒或汽水，應慢慢斟入杯中，但不宜倒的滿，溢出杯外;
?、奚喜藭r要輕巧，不要弄出聲來，端送盤、碟、碗時，要以四雙支手指支撐底部，姆指輕按緣邊，不可觸及食物。
⑦上菜的方向，從客人的左方端上，但飲料恰愉相反，要用右手從右方奉上：有時視餐桌的位置，可便宜行事;至于上菜先后順序，最好是預先得知誰是主人，以便按賓主先后之序進行。
?、酂釥C的中菜上桌時，應提醒客人的注意，因為有些用油燉的菜雖然沸，但沒有冒熱氣，不知情的客人往往一口氣咽下，容易受傷;
⑨外籍客人用中餐時，除筷子外，并準備刀叉，視其習慣與需要提供應用;
?、馔饧腿顺灾胁藭r，征求他們抽意后才給予分菜，分菜時不要羹液溢出，尤其是湯汁落在桌上，弄污餐桌，給予客人不良印象;
注意：服侍中注意水或酒、菜及飯的加添時機，避免客人等候;隨時更換煙灰缸、毛巾、湯碗、骨盤于無形之中，如換煙灰缸送上清潔的即撤除有煙蒂的。
